You can set this up using the ops console. Go to ops console device management and under VXML server configuration table you can define the things you want to log from the CVP app.  Look at the configuration and admin guide and it will give you more details on how you can set and inclusive and exclusive filters to set this up.
You will see this data reflect in the CVP app reports in CUIC. Alternatively you can create your own reports also. You can look at applicationsummary_daily, applicationsummary_15 tables to get the details.
